    Pavlova

    Ingredients

    • 150ml eggwhite (about 5eggs)
    • 200g caster sugar
    • 30g cornflour sifted
    • 10 mls white vinegar
    • 300ml cream whipped to soft peak
    • 100 ml natural greek style yoghurt (optional)
    • 1 punnet strawberries (some dipped in white chocolate to garnish and the rest halved)
    • 1 punnet raspberries
    • 1 punnet blueberrieswhite chocolate for decorations

    Method
    Preheat oven to 150°C. Place the egg whites in the bowl of an electric mixer and whisk until stiff peaks form. Gradually add the sugar, whisking well, until the mixture is firm and glossy. Add the cornflour and vinegar and whisk until just combined. Shape the mixture into about a 23cm round on a baking tray lined with non-stick baking paper. Reduce oven to 120°C and bake for 1 hour 20 minutes. Turn the oven off and allow the pavlova to cool completely in the oven. Spread the cream over the meringue, (if you like it a little tangy, fold the yoghurt into the cream) and sprinkle over with strawberries, blue berries and raspberries. Garnish with white chocolate curls or swirls, and a light dusting if icing sugar.

  • Coffee Roll

    Coffee Roll

    3 large eggs (room temperature)

    100g caster sugar

    75g plain flour

    40ml coffee liqueur

    1 tsp vanilla bean paste

    1 tblspn instant coffee mixed in 20ml boiling water

    40g flaked almonds


    Whip the eggs, sugar and vanilla until light. Fold in the sifted flour and coffee. Line a baking tray with baking paper and sprinkle over the almonds. Spread the cake batter evenly onto a oven tray with a lip and bake for 12-15 minutes until the cake springs back to a light touch.
     

    Place a piece of baking paper over the top of the cooked cake and carefully flip the cake over onto a large wire rack. Lay a tea towel down and a fresh piece of baking paper and lightly sprinkle with a little caster sugar. Flip the cake onto the tea towel so that the almond side   is on the base. Gently roll up to a roll and allow to cool. Gently unroll and then spread with coffee cream. Serve on a platter with fresh blueberries and blackberries.


    Coffee cream

    250g mascarpone

    20ml coffee syrup

    125ml cream


    Whip together until firm.

  • Lemon Blueberry Layer Cake

    Lemon Blueberry Layer Cake

    225g unsalted butter at room temperature

    2 lemons zest and juice

    340g Self Raising Flour

    200g caster sugar

    4 large eggs room temperature

    120ml milk


    Grease 2 x 23cm spring form baking tins. Sift the flour. Whip the butter and sugar until light and fluffy, add the eggs one at a time, add the lemon juice and zest and gently fold in half the flour. Fold in the milk and the remaining flour. Divide evenly into the two prepared baking tins and bake at 170 degrees for about 15-20 minutes until the centre springs up to the touch. Remove and set aside. Allow to cool and un-mould. Carefully slice each in half horizontally across the diameter.


    Lemon curd

    3 eggs

    150g sugar

    80ml strained lemon juice

    80g chilled butter, cut into cubes

    6g cornflour

    350g whipped cream


    Combine the eggs, sugar, juice and cornflour in a saucepan. Whisk constantly until thick. Add butter & whisk until melted. Pour into a bowl & cover the top with freezer wrap so that a skin does not form. Allow to cool. Once firm & cool, fold in the whipped cream.


    To assemble

    1 jar good quality sugar free blueberry jam.

    Lemon cream

    Fondant flower decorations


    Place a layer of cake on a cake stand and spread a thin layer of blueberry jam. Top with a thin layer of lemon cream and repeat. For the final layer spread a little of the lemon cream over the top and the sides to mask the cake and with a large cranked handle spatula smooth over evenly. Decorate with fondant flowers and enjoy with a cup of tea.

  • Push-up Pops

    Push-up Pops

    Ingredients

     (makes approx 24)
    For the Sponge
    • 150g caster sugar
    • 5 large eggs
    • 60g melted unsalted butter
    • 150g plain flour, sifted

    Method
    For the Sponge
    Preheat the oven to 200°C. Line a large baking tray. Whisk the eggs and sugar until light & fluffy. Gently fold in the flour & then the butter. Spread evenly onto a large baking tray & bake for 10-15 minutes until it springs back to the touch. Remove & allow to cool. With a cutter, cut circles the diameter of the push up pop container (4-4½cm), alternatively use a small macaroon pan to make individual layers.          
    For a Chocolate Sponge
    Use 130g flour and 20g cocoa powder and sift together.
    For the Strawberry Filling
    Finely chop strawberries. Whip cream & a little sifted icing sugar to taste, to firm peaks. Gently fold in the strawberries. Layer the cake & pipe in the cream in even layers. Garnish the top with strawberry & chocolate decoration, & a mini meringue if desired. You can also add a little strawberry liqueur to the cream or sprinkle the cake layers with a little liqueur if desired.      
    For the Raspberry
    Layer with sweetened whipped cream & fresh raspberries.
    For the Lemon and Blueberry
    Fold a little whipped cream into lemon curd and layer the cake and lemon cream with fresh blueberries.          
    For the Black Forest Pops
    Cut out rounds of the chocolate sponge. Whip cream with a little icing sugar to taste. Layer chocolate sponge rounds with brandied cherries and a little cherry brandy on the sponge cake. Pipe in cream and layer. Top with a cherry and grated chocolate and chocolate curl. For the brandied cherries, I use pitted cherries in a sterilised jar sprinkle over with sugar and top with brandy (1/3 each ingredient). Seal and allow to cure for a couple of weeks before serving. *Alternatively use kirsch and tinned cherries.
    For the Tiramisu Pops
    Dip the sponge in a strong good quality coffee (brewed or espresso with a splash of marsala optional), and squeeze out excess liquid. Layer in the pop container and top with marscapone cream and then dust with good quality cocoa powder. Keep layering and dust the top with cocoa powder and garnish with a chocolate decoration and coffee bean. Mascarpone cream: 3 eggs, 250g mascarpone, 70g caster sugar. Whip the eggs and sugar over a double boiler until light and fluffy, add the mascarpone
    For the Pinacolada Pops
    Toast a small amount of shredded coconut until golden. Whip cream and fold through pineapple jam or chopped glaced pineapple. Sprinkle the sponge cake with a little coconut rum and pipe in cream then sprinkle a little toasted coconut and continue to layer. I added a middle layer of finely chopped glaced pineapple.
    For the Breakfast Pops
    Spoon in natural yoghurt, muesli and fruit of your choice and keep layering.

    White Chocolate & Raspberry Charlotte

    Ingredients        

    For the Sponge 24cm Cake
    • 85g cornflour
    • 115g bakers flour
    • 6 eggs separated
    • 170g caster sugar
    • 2 drops lemon juice
    White Chocolate Bavarois
    • 220ml milk
    • 220ml cream
    • 120g good quality white chocolate (melted)
    • 10g leaf gelatine (soaked in cold water)
    • 90g sugar
    • 100g egg yolks (about 5)
    • 450g whipped cream
    • 1 punnet raspberries
    • 1 punnet blueberries
    • 1 pkt frozen raspberries white chocolate to garnish

    Method
    Preheat oven to 180°C. Sift together the cornflour & bakers flour. Whip the egg yolks & 60g sugar until light & creamy. Whip the egg whites with lemon juice & half the remaining sugar until stiff peaks form. Add the remaining sugar. Fold in the egg yolk mix, & then gently fold in the flours. Line a baking sheet with non stick baking paper & using a large piping bag with a plain nozzle, fill the bag & pipe into 8-9cm zigzags, piping the length of the tray. Bake for about 10 mins until cooked & golden. Allow to cool, Bake 2 x 24cm round cakes about 1½cm thick. Boil the milk & cream. Whisk the egg yolks with the sugar & then slowly add the boiled cream/milk mix. Add back to the saucepan & cook slowly, whisking constantly to 85°C until the mix coats the back of a spoon. Strain & add the melted chocolate & gelatine (squeeze out the excess water). Cool over an ice bath. Once cold fold in the whipped cream. 

    To assemble: Line the sides of a 24cm springform cake tin with acetate & the base with baking paper. Place the strips of baked sponge around the side. Place a round of sponge cake on the base & line with frozen raspberries. Pour over half the white chocolate bavarois to come halfway up the cake pan & place in the refrigerator to set. Place another round of sponge on top & cover with more frozen raspberries. Top with remaining white chocolate bavarois & then allow to set in the fridge for a few hours. Garnish with fresh berries & white chocolate curls.

    Summer Pudding

    Ingredients

    (makes 6-8 serves)
    For the Cinnamon Brioche
    • 15g fresh yeast
    • 70ml warm milk
    • 5g salt
    • 500g flour
    • 10g cinnamon powder
    • 6 eggs
    • 350g softened butter
    • 30g sugar
              Berry Coulis
    • 150g blueberries
    • 150g black currants
    • 200g blackberries
    • 200g raspberries
    • 1 punnet strawberries chopped in half
    • Caster sugar to taste
              Raspberry Foam
    • 250ml raspberry puree (strained)
    • 160ml pomegranite juice
    • 30g sugar
    • 8g gelatine powder
    • 50ml water

    Method
    For the Cinnamon Brioche
    Add the yeast and milk and whisk lightly. Add flour, cinnamon, salt, sugar and eggs and knead in a KitchenAid mixer until smooth. Add softened butter to the dough a little at a time, until the dough is smooth shiny and elastic (about 10 mins). Cover and leave to rise in a warm place (about 1hr). Knock back, cover again and refrigerate several hours. Mould into loaf tins and Bake at 170°C for 15-20mins.
    For the Berry Coulis
    Lightly cook together.Strain and reserve the juice to soak the brioche, and the berries to layer between the brioche layers.    
    For the Raspberry Foam
    Soak the gelatine in water. Dissolve and add to the pommegranite juice then add the raspberry puree. Pour up to halfway into a cream cannister. In one turn, charge with gas. Cool for 2 hours before use. When you need to refill. Make sure that you expel everything from the cannister and release before unscrewing.          
    To Assemble
    Cut the brioche into rounds to fit the food rings. Dip the brioche in berry juice quickly and squeeze out excess liquid. Place in bottom of mould. Spoon a few berries on top and repeat with brioche and berries. (3 layers) when cold pour a little jelly on top.(use raspberry or strawberry jelly) Garnish with fresh berries, raspberry foam, vanilla icecream or mascapone, and a meringue cigar. *alternatively, substitute pannetone instead of the brioche

    Summer Berry Trifle

    Ingredients

            

    For the Trifle
    • 2 pkts mini jam rolls
    • 2 punnets fresh strawberries
    • 2 punnets fresh raspberries
    • 1 punnet blueberries
    • 1 pkt frozen mixed berries
    • 1 jar good quality red currant jam
    • 6 sheets leaf gelatine (12g)
    • 600ml cosmopolitan cocktail mix
              White chocolate cream
    • 500ml milk
    • 45g cornflour
    • 50g sugar
    • 4 egg yolks
    • 1 vanilla bean (optional)
    • 100g good quality white chocolate, chopped
    • 600ml cream, whipped to soft peak

    Method
    For the jelly, soak gelatine sheets in cold or iced water. Once soft squeeze out excess water. Heat 200ml cosmopolitan cocktail mix and add the gelatine to dissolve. Add the remaining 400ml of cocktail mix with 150ml water. Allow to cool. Line the inside edge of the base of the trifle dish with sliced strawberries. Gently pour in the jelly mix and add chopped strawberries to the jelly mix. Allow to firm in the fridge. Combine 1 punnet raspberries, a handful of blueberries and a packet of frozen mixed berries and add ¾ of the jar of the red currant jam. Mix together and set aside. For the white chocolate cream bring the milk to the boil with the vanilla bean. In a bowl combine the egg yolks, sugar, and cornflour. Gently pour over the hot milk and whisk. Remove the vanilla bean. Pour back into the saucepan and cook over low heat until the mixture thickens. Add the white chocolate and whisk until it has melted. Pour into a bowl and cover with plastic wrap or freezer film directly onto the surface so that a skin does not form. Allow to cool. When cool whisk lightly & gently fold in 1/3 of the softly whipped cream to combine then add the remaining cream. Cover and set aside in the fridge. Cut the jam rolls into 8mm-1cm rounds and place a layer laying flat on the jelly. Gently spoon over about an inch of cream mix. Place a layer of jam roll slices standing up along the inside edge of the bowl resting on the pastry cream. Line the centre with jam rolls laying flat. You will have created a shallow hole. Spoon in the mixed berries, to the top of the layer of jam rolls. Place a fresh raspberry on the jam rolls on the inside of the trifle bowl and then fill with white chocolate cream. Chill and allow to firm up in the fridge before decorating with fresh berries and white chocolate curls.
