Radicchio salad

Serves 4-6


  • ½ radicchio, cut into thin wedges
  • ½ witlof, leave separated
  • ¼ fennel, finely sliced
  • celery leaves from heart
  • dill sprigs
  • 1 ruby grapefruit, segmented
  • 1 orange, segmented
  • ½ red onion, sliced
  • 20g currants
  • 30ml red wine vinegar
  • 50ml olive oil


Combine the red onion, currants, vinegar & oil in a small bowl and season with pepper. Allow to marinate for 1 hour. Combine the remaining ingredients in a serving bowl and dress with the dressing.
