Hawaiian Rice
Serves 8
1 cup cooked basmati rice
1 onion
10-12 cooked Australian prawns
¼ pineapple, diced
4 spring onions, sliced
50g toasted macadamia nuts, roughly chopped
30g toasted shredded coconut
½ punnet cherry tomatoes, sliced in half
1 firm mango, sliced
1 avocado, diced
1 shallot, finely sliced
1 small cucumber, sliced
¼ bunch coriander, roughly chopped
1 chilli, finely sliced
1 tablespoon, grated ginger
2 cloves garlic, crushed
30ml soy sauce
2 limes, juiced
salt and pepper
Combine the ginger, garlic, soy and lime juice together. Adjust seasoning and season with salt and pepper. Combine all ingredients together and toss with dressing. Place into a serving bowl and serve.
