Quinoa Salad
Ingredients
- 200g tricolour quinoa cooked, rinsed and drained
- 150g fetta, lightly crumbled
- 100g sprouted mung beans
- 1 punnet cherry tomatoes, sliced roughly
- 1 can black beans, rinsed and drained
- 1 small cumber, cut into cubes
- 1 cob of corn, cooked and kernels sliced off
- 2 spring onions sliced
- ½ bunch parsley chopped
- ½ bunch coriander chopped
- 1 red chilli chopped
- ½ red capsicum diced
- 1 tsp cumin seeds roasted and ground
- Salt and pepper to taste
- Juice 1-2 limes
- 2 tbsp Olive oil
Method
Combine all ingredients together and season to taste with olive oil, salt, pepper and lime juice, and toss carefully.
