Lemon Cookies
(Makes about 42 at 20g each)
Ingredients
375g plain flour
10g baking powder
200g caster sugar
pinch salt
125g butter, softened
2 eggs
40ml lemon juice
zest 1 lemon
5ml lemon extract
250g sifted icing sugar to roll
Method
Whip the butter and sugar together, then add the eggs 1 at a time. Sift together the remaining dry ingredients. Add the lemon extract and fold in the dry ingredients along with the lemon juice. Spoon into 20g balls. Place the icing sugar in a bowl, and roll the cookies in icing sugar and place on a lined baking tray. Bake at 160C 12-15 minutes until very lightly golden. Allow to cool.
