- 12 mangoes stoned and peeled, cut into small chunks (about 2kg fruit)
- 4 peaches cut into small chunks
- 3 brown onions finely diced
- 4 cloves garlic finely chopped
- 1 red chilli finely sliced
- 6 small dried chillies
- 70g ginger finely chopped
- 400 raw caster sugar
- 200g brown sugar
- 750ml white vinegar
- 2 teaspoons salt
- 2 cinnamon sticks
- 2 tsp yellow mustard seeds
- 2 star anise
- 2 tsp cumin seeds
- 6 green cardamom pods
- 125g sultanas
Method
Combine all ingredients in a large saucepan and bring to the boil. Reduce to a simmer and skim the top and simmer stirring occasionally for about 2-2½ hrs until thick. Pour into sterilised jars and seal. Store in a cool dry place and serve as an accompaniment to a
