Mango Chutney

Mango Chutney

 Makes 7-8 350ml Jars


  • 12 mangoes stoned and peeled, cut into small chunks (about 2kg fruit)
  • 4 peaches cut into small chunks
  • 3 brown onions finely diced
  • 4 cloves garlic finely chopped
  • 1 red chilli finely sliced
  • 6 small dried chillies
  • 70g ginger finely chopped
  • 400 raw caster sugar
  • 200g brown sugar
  • 750ml white vinegar
  • 2 teaspoons salt
  • 2 cinnamon sticks
  • 2 tsp yellow mustard seeds
  • 2 star anise
  • 2 tsp cumin seeds
  • 6 green cardamom pods
  • 125g sultanas

Combine all ingredients in a large saucepan and bring to the boil. Reduce to a simmer and skim the top and simmer stirring occasionally for about 2-2½ hrs until thick. Pour into sterilised jars and seal. Store in a cool dry place and serve as an accompaniment to a
