Radicchio salad
Serves 4-6
Ingredients
- ½ radicchio, cut into thin wedges
- ½ witlof, leave separated
- ¼ fennel, finely sliced
- celery leaves from heart
- dill sprigs
- 1 ruby grapefruit, segmented
- 1 orange, segmented
- ½ red onion, sliced
- 20g currants
- 30ml red wine vinegar
- 50ml olive oil
Method
Combine the red onion, currants, vinegar & oil in a small bowl and season with pepper. Allow to marinate for 1 hour. Combine the remaining ingredients in a serving bowl and dress with the dressing.
