Slow Cooked Satay Chicken
Ingredients: Serves 4
1 large onion, chopped
600g chicken thighs, chopped
1 tbsp minced ginger
1 tbsp minced garlic
3 tbsp smooth peanut butter
400g full-fat coconut milk
Juice of 1/2 lime
1 chicken stock cube, crumbled
1 tbsp soy sauce
1 tbsp curry powder
1 tsp chilli powder
1 tsp sugar
1 red chilli, sliced
Method:
- Place all ingredients in the slow cooker. Season well and mix together.
- Cook on high for 4 hours or on low for 8 hours.
- Garnish with chopped coriander, sliced chilli, and crumbled peanuts before serving.
