Zucchini and Cucumber Yoghurt
Ingredients
- 1 small zucchini
- 1 small cucumber
- 1 tsp salt
- 1 lime zest and juice
- Chopped mint
- 250g yoghurt
Method
Grate the cucumber and zucchini, season with salt and set aside for 10 minutes. Squeeze out the zucchini mix, and then combine all ingredients together. Serve as a dip with pita bread, or serve alongside garfish involtini, or roast lamb.
