The tajine's conical shape creates a unique way of cooking. It is a sealed vessel, with very little liquid added. Slow cooking creates steam that moves up the conical lid, creating condensation which drops back into the food. This not only creates a tender slow cooked meal, it also enhances flavours and moisture which makes the tajine so special, the vegetables tender and the meat succulent and fall of the bone. Use for large curries, casseroles, soups, and pasta dishes!
It is preferential when you use the tajine, use a simmer matt to diffuse the heat (98101) Please be mindful of thermal shock, so ensure that you do not use the tajine in extreme conditions (do not place on heat directly from the fridge, or from the heat directly into cold water or fridge or freezer)
- Care instructions: wash the pan in hot mildly soapy water, rinse and dry thoroughly, rub the inner surfaces with olive oil before storing. Alternatively, hot water and baking soda (or salt) are sufficient for cleaning your tagine.
