Salt and Vinegar Potatoes

Cover potatoes in 2/3 vinegar 1/3 water and season well with salt. Boil until tender then drain. Place in a bowl and crush slightly, drizzle with olive oil and add a few cloves of garlic, some rosemary and season with salt and pepper. Place on a lined roasting tray and roast in a hot oven until golden and crispy.
